CHARACTERISTICS OF PREPARATION
Selected vintage using inert gas. Pre-fermentative maceration at 8 ° C for 24 hours (wort and skins) in CO2 inerted tank prior to cold pressing. Fermented with selected yeasts at 17ºC for 16 days.
Second fermentation in bottle following the Traditional Method Champegnois during 9 months.
