Ximénez-Spínola is undoubtedly a unique winery, among other things because it works only the pedro ximénez grape, something that no other winery does in the Marco de Jerez. Ximénez-Spínola is undoubtedly a unique winery, among other things because it works only the pedro ximénez grape, something that no other winery does in the Marco de Jerez. This condition has earned them the obtaining of a special accreditation by the Spanish government: "Pedro Ximénez Varietal Denomination of Own Accreditation".

The wines of Ximénez-Spínola are very Jerez, but also very particular. They are elaborated following methods created by the family itself, different from the most usual ones in the area, but at the same time they preserve all the magic of the Jerez albariza. Even today, it continues to be a family business that is committed to quality and numbers each of its bottles exalting the quality they contain.

To produce Exceptional Harvest, pedro ximénez grapes are harvested three weeks after their optimal ripening point, which allows the grapes to concentrate sugars without extreme passions. The yields are very poor, obtaining only 575 liters per ton of grapes, but the result more than compensates for this sacrifice.

The wine is aged for four months with its own lees in old American oak barrels previously used for the fragrant house, acquiring part of its aromas and gaining elegance and complexity. Seduce instantly with its gleaming golden color. In the nose the pleasure multiplies, the quinces and the flowers embrace the citrus and honey memories; ginger and white pepper adorn the orange peel, nuts and angel hair transport us to the confectionery of our childhood. The palate is glyceric, greasy and fresh at the same time, with the salt and the hydrocarbons outlining a liqueur silhouette. The sweet-acid-salty game is so exciting, that in a last breath the bitter touches seem not to want to miss the game and add to an aromatic mineral and elegant as few.
