Ximénez Spínola Pedro Ximénez Very Old is a cult wine made with Pedro Ximénez grape, hand-harvested and dehydrated for a minimum of 21 days in the sun in a slow and progressive way, concentrating the wine fructose typical of its variety and providing the elegant natural sweetness. After dehydration, 300 kg of grated grapes are obtained for every 1,000 kg of fresh grapes.

The must will age for a minimum of 15 years in American oak barrels, in solera started in 1918. Afterwards, all the barrels will be tasted and those that will be used in full will be discriminated from those that will be partially used.

The clarification is done by natural decanting of the barrel, the wine going directly to the bottle through a cellulose filter to preserve the qualities of the wine.

Wine from Jerez de la Frontera. Following the family tradition of only producing Pedro Ximénez grape products, this "Jerez blend" is the result of a careful mix between the soleras 1918 (Pedro Ximénez de pasas) and 1964 (Pedro Ximénez oxidative aging), following the quality parameters of the house.
In the Ximénez Spínola Old Harvest we find the solera of 1918, with very high levels of natural dehydration by "soleo"; For each ton of raisined grapes, about 200 liters of authentic raisin must be generated. After an aging of no less than 25 years in American oak barrels will begin. Regarding the solera of 1964, the wine is 100% Pedro Ximénez oxidative aging, "unique piece" in all parts of Jerez. White variety that behaves "dry" with notes very similar to "Palo Cortado" and "Olorosos" classics of the area, but with the elegance of the grape that in Jerez has never been bottled with this elaboration and aging so marked . The selected boots of both soleras, are assembled a year before being bottled in a proportion in which the oxidative aging predominates, but in which the edges of the oak are rounded by the wine of raisins.
