When the piece reaches the customer is already at the point of healing and fit for consumption, can wait up to 2 or 3 months to consume. This depends mainly on the storage site.
This whole piece (without starting) should be stored in a dry place. Once it started it is advisable to cover the same area with the lean fat piece and a cloth.
All the parts are cured in our natural drying in the Sierra de Aracena, at a height of about 600m above sea level, ensuring an ideal cure for Iberian pork products.
Healing time is approximate 1.5 years, dependending weight of the piece.
The product will come wrapped in greaseproof paper in a plastic bag and into the pocket of fabric. All this within a box designed primarily to facilitate transport of the workpiece.
EYE! By the time you receive the package remove the plastic bag the product, to transpire the piece.
