Mouth: Very elegant and complex, it shows notes of sweet vanilla, roasted coffee and cedar wood. Dry and persistent.
Aging average: 10 years
Elaboration: Palomino Fino grapes are harvested by hand and collected in small boxes to avoid damage to the bunches. Then they undergo a gentle pressing, followed by a fermentation at controlled temperature of 24ºC. Once you reach the 11-12 alcoholics, you head with liquor until you reach 20º alcohol. The generous wine, once fortified, is transferred to American oak boots of 500 liters, where they age through the unique system of soleras. The special microclimate of El Puerto de Santa María, where our winery is located, favors oxidative aging in a gentle way
