After having obtained the alcohol brandy, Ximénez-Spínola Brandy Criaderas ages in chestnut wood barrels over 75 years old and 750 liters capacity. The chestnut has the ability to not give the product excessive acidity, being very respectful of the original liquid and even providing certain fruity notes.
Ximénez-Spínola is a small Jerez family winery with little production but very high quality. Their brandies excel especially.
