The extraordinary characteristics of this Brandy are the result of the careful selection of the raw material with which it is made. The selection begins with the grapes that always come from the chosen plots. The maturation moment of the grape as well as the method of distillation, are determinants for the final quality of the distillates (holandas). The holandas (seven liters of wine are necessary to get one from Holland) are aged in American oak barrels that have previously been shipped with Oloroso wine for a minimum of three years, and following the traditional system of Soleras y Criaderas, rigorously controlling the Volume of bags so that the age of the Brandy is kept constant.
The characteristic form of aging allows a mixture whose minimum period is three years, but with an average of eight, and even reaching (in some cases) twelve.
