RED WINE SIERRA CANTABRIA "RESERVA" RIOJA tempranillo 75 cl.
 Is a red wine made from the Tempranillo and Graciano varieties, with grapes from low yield vineyards and more than 30 years old, planted on their own estates in San Vicente de la Sonsierra, in the D.O. The Rioja.
After the harvest, manual with selection of clusters, is despalilla and begins the alcoholic fermentation with selected yeast for 8 days. It goes through a post-fermentative maceration with the skins for 21 days while being vigorously pumped twice a day until the fermentation is finished. During maceration, the frequency of pumping is reduced as the process progresses, to avoid the extraction of bitter and vegetable characters.
Performs malolactic fermentation in barrel. Aging takes place in French and American oak barrels, 40% new, 60% maximum of 3 wines for 18 months. It is transported every 4 months and is bottled unfiltered.
