The Bassus Red Wine Finca Casilla Herrera, is elaborated mainly with typical Valencian grape, Bobal varietal type; a coupage has been made with variety grapes: Cabernet, Merlot, Syrah and Petit Verdot. It has a D.O. Utiel-Requena, which has a continental climate influenced by the Mediterranean and clay and limestone soils. For the production of Bassus Finca Casilla Herrera Red Wine, the best grapes from low production vines are selected from their own Pinot Noir vineyards, harvesting only in the morning and using 15 kg boxes. Once in the cellar, the boxes filled with grapes are placed in a cold room, keeping them for 3 days at -10ºC. After this, box by box is selected and destemmed and encubado in American oak barrels.

To proceed with the cold maceration at 8ºC, a stainless steel plate cooled by water is introduced; to each barrel for 4 days. The hat sinks daily, barrel by barrel, manually. As for the fermentation, the cooling water is closed so that the barrel itself can reach a maximum of 26ºC of temperature. After 15 days, the grape is pneumatically pressed, pressing no more than 0.5 Bars. Aged for 10 to 20 months in new French Allier oak barrels, and bottled by filtering it lightly.

Serve this wine at a temperature between 16 and 18 degrees.
