One ferments this Amontillado Sherry in barrels of wood of oak, ages under a veil of "flower" of more than eight years. The additional ripeness, it allows the oxidation of the wine at least other eight more years. Then we add scarcely a tact of our Pedro Ximénez's Sherry to do less dry Amontillado and slightly sweet this one.
