White wine PAGO DE VALLEGARCIA MIRIADE / CASTILLA VIOGNIER 75 cl.
Coming from five hectares of land cultivated by a trellising system with bilateral cord in Smart-Dyson, Miriade's grape yield is 9,000 kilos per hectare. The harvest is done by hand at the optimum time of ripening of the fruit. For the transport to the warehouse, small boxes of 15 kilos of capacity are used with the objective of not breaking the grains and keeping them in the best possible conditions.
Already in the facilities of the winery, the harvested grape is despalilla and squeezes before macerating pre-fermentative in cold to 8º of temperature. Miriade must is obtained after a controlled phase of fermentation in storage. Ultimately and before being bottled, the wine rests for half a year on its lees.
