WHITE SPARKLING WINE TANTUM ERGO VINTAGE cava (valencia) 75 CL.
Is a cava belonging to the D.O. Utiel-Requena, characterized by a continetal climate already influenced by the Mediterranean, with clayey and limestone soils. Made from varietal grapes Chardonnay and Pinot Noir (Blanc de Noir). This cava alone will be elaborated the years that the quality is optimal. For the elaboration, a selection of the best grapes is made in own strains of low production, harvesting in the morning, in boxes of 15 kg, once in warehouse they are kept in cold rooms at -10ºC for three days. Later, the boxes are selected and the maceration is carried out in cold (8ºC) for 36 hours, with a light pressing of 0.5 Bars. It passes through a first fermentation at 16ºC in new American oak barrels and second fermentation in bottle at 14ºC. The breeding on lees is a minimum of 44 months and the degüelle is manual.
