In 1920 and in 1922 Williams & Humbert set aside a boot of must to celebrate the birth of a member of the Humbert family. In 1924, they decided that it would be interesting to keep aside a boot of each vintage, which was always from the same vineyard: Alama, from Balbaina. These vintage wines receive only a slight initial heading and a small clarification with egg white; Rarely samples are taken. As it is impossible to keep the same amount of wine in the boots with similar wines, the level decreases progressively, and every fifteen years approximately it is transferred to other smaller vessels.
In order to ensure that the appropriate surface is exposed to the air, the vessels containing the aging wine are normally filled to 80% of their capacity, evaporating about 5% every year. It is estimated that a wine boot that does not undergo any sack, can take about seventy years to evaporate at all. In the year 2000, a small bottle of bottles corresponding to the Vintage of 1933 was bottled, classified by a committee of experts as Oloroso Viejo.
