WHITE WINE IMPROMPTED F. BARRICA UTIEL-REQUENA SAUVIGNON BLANC 75 CL.
Impromptu Sauvignon Blanc is a white wine made in the D.O. Utiel-Requena by Bodegas Hispano + Suizas.
As its name indicates, it is a monovarietal of the variety Sauvignon Blanc. The grape comes from vineyards of old vines owned by the winery. Vineyards of poor yield but that give a grape of a great quality, planted in limestone-argillaceous soils and exposed to a continental climate with Mediterranean influences.
The harvest is done manually, and is done in the morning at the lower temperature to keep the grapes fresh until they arrive at the winery. The transfer of the grapes is made in small boxes of 15Kg, which help to reach the winery in the best possible conditions.



Quantity

Once in the cellar, the grape is kept for 3 days at a temperature of -10 ° C in cold rooms, in order to try to achieve a great extraction of aromas and flavors by breaking the cell wall of the grape.
The grapes are despalilla and squeeze to obtain a paste that is introduced in stainless steel tanks and allowed to macerate for more than 16 hours at 0ºC.
Once the maceration is finished, a light pressing in a pneumatic press is applied to obtain the wort. This must decanta for 24 hours to clean it of impurities. The fermentation of this must is produced in new American oak barrels of 400 liters, at a temperature of 14ºC. At the end of the fermentation, Impromptu Sauvignon Blanc is kept on its lees until bottling.
