Type of aging: Pedro Ximenez grapes previously pressed are pressed and left to start fermenting and in the beginning wine alcohol is added until a final graduation of 15%. Not having completed their fermentation, a large part of the sugars of the grapes are present in this must, which goes to their traditional system of aging of soleras and criaderas.
Years of barrel aging: 8 years.

Acidity: 4.16 g / l.
